Instructions
1. Prepare the Crust: Preheat the oven to 160°C (320°F). Grind the biscuits into fine crumbs and mix them with the melted butter. Press into the base of a round springform pan and bake for 10 minutes.
2. Prepare the Filling: In a mixing bowl, beat the cream cheese with sugar and lemon juice for 3 minutes. Split the vanilla pod, scrape out the seeds, and add them to the mixture. Gradually add eggs and egg yolk, beating for an additional 3 minutes.
3. Bake: After baking the crust for 10 minutes, pour the cheese mixture on top and return to the oven. Bake for 40 minutes at 160°C (320°F).
4. Prepare the Sauces:
- Berry Sauce: Blend half of the raspberries with sugar and water until smooth, then add the rest of the berries for texture. Chill.
- Strawberry Sauce: Blend half the strawberries with yogurt and add the remaining chopped strawberries. Chill.
- Chocolate Sauce: Melt dark chocolate with hot cream, stirring until smooth.
5. Serve: Once the cheesecake has cooled to room temperature, chill it in the fridge for 1 hour. Serve it with the fruit sauces for a heavenly taste!
