Cheese Soufflé is a traditional French dish known for its fluffy, cloud-like texture. The name comes from the French verb souffler, meaning "to puff." This dish dates back to the early 18th century and is credited to French chef Vincent de la Chapelle.

                               


🛒 Ingredients:


85g strong-flavored cheese (plus 4 small balls for the center)


30g butter


125ml milk


30g flour


Salt to taste


1 pinch cayenne pepper


1 egg yolk


4 egg whites


Zest of 1 lemon


To Line the Ramekins:


12g breadcrumbs


4g finely ground hazelnuts


👩‍🍳 How to Make Cheese Soufflé:


1. Prepare the Ramekins:


Preheat the oven to 190°C.


Lightly butter the ramekins and coat with breadcrumbs and hazelnuts.


Refrigerate if not using immediately.


2. Make the Béchamel Sauce:


Melt butter in a pan, whisk in flour until smooth.


Gradually add milk, whisking until thickened.


Season with salt, cayenne, and lemon zest.


Let it cool slightly.


3. Prepare the Egg Whites:


Beat egg whites until soft peaks form.


4. Combine Ingredients:


Stir egg yolk into the béchamel.


Gently fold in one-third of the egg whites, then fold in the rest.


5. Fill and Bake:


Fill ramekins halfway, place a cheese ball in the center, then add more mixture.


Smooth the tops and bake in a bain-marie (water bath) for 10 minutes.

Store: Refrigerate for up to 1 week or freeze for 2 months (wrap tightly).


Reheat: Warm at 180°C for 6-7 minutes.
